A Santa Lucia Highlands sparkling wine, the Brut Cuvee is composed of 60% Chardonnay and 40% Pinot Noir and offers a smooth yeasty nose. The consistency of the Pinot Noir and Chardonnay in the Highlands makes it possible to deliver these distinct bubbles dependably year after year. Pale golden color, miniscule bubbles coming from the core with a pronounced yet fine mousse. Nuanced fruit aromas including Macintosh apple, ripe apricot and lemon zest. Underpinning floral notes enhanced with rich vanilla, creamy lemon and honeycomb. Opens with crisp savory acidity on the front palate. Well structured mouth feel, delivers tastes of citrus and stone fruit with hints of oyster shell minerality. Finishing with a soft creamy, well integrated lingering acidity.
Starbright pale wheat, prevalent mousse with persistent present bubbles. An array of citrus fruits including lemon curd and orange blossom. Notes of yeasty Hawaiian sweet roll bread dough and sugar coated almonds. Zingy acidity from the front to mid palate. Nuances of crisp honey apple, pithy grapefruit and lively citrus zest. Lingering balanced fruit and acidity on the finish.
2013 Brut Cuvée
Translucent yellow. Persistent and vigorous pinpoint bubbles; generous mousse. Rich red and citrus fruits highlighting juicy honey crisp apple and fresh lemon. Yeasty glazed donut; brioche toast balanced with soft florals and chalky minerality. Racy lime, sugared lemon wedge, pineapple and kumquat fruit notes backed by hints of intergrated yeastiness throughout. Very bright and fruit forward, salivating crips finish.
Pale straw showcasing a vigorous bubble bead and prominent mousse. Aromas of lemon meringue and citrus fruit coupled with subtle undertones of toasted brioche. Crisp Granny Smith apple and Meyer lemon with hints of mineralistic salinity and toasted almond. Persistent integrated acidity balanced with bright citrus through the palate, finishing on a lively lingering note.

2008 Brut Cuvée
Pale golden straw, miniscule vigorous bubbles, delicate mousse. Powerful aromatics, Meyer lemon zest, brioche, pineapple. Soft and integrated Meyer lemon, bright, strong and balanced. Delicate long finish.
Bright lemon color. Beautifully creamy adn toasty aromas; so mellow, harmonious, and complex. Huge acidsmake for a crisp palate witha seemingly infinite acid line, yet the mouthfeel is beautifully soft and fluffy, thanks to a super refined mousse. To produce such a classic reductive style using 100% oak is a demonstration of barrique handling at it's most masterful.

Tasting Notes, 2015. In 2015, the 07 Brut Cuvee was awarded Best Sparkling Wine in the USA. It also won a gold medal and a best in class award for Best USA Vintage Blend. In 2014 the same wine won a silver medal, one of the three Silver’s awarded to the USA in 2014.
