Our Viognier comes from one of the highest elevated blocks and is also the smallest block on Escolle at only .22 acres. In vintages where it is produced, it is extremely limited. The grapes were hand harvested into small totes and lightly pressed at 135 gallons per ton. After fermentation in a one ton stainless tank, the wine was racked to a neutral French oak puncheon. The Viognier aged for a total of five months in oak prior to bottling.
